My husband is a picky eater.

I know I’ve mentioned this…It kind of consumes me.

Most normal people would be super happy that all they had to cook to make their husband happy was “Matt Casserole”, which consists of ground hamburger with doritos crushed over the top.   But it just really irritates me sometimes.

I think what irritates me the most is that there’s no logic to his dislikes….He hates all vegetables, but loves green bean casserole and beef stew.  He loves buffalo chicken sandwiches, but won’t eat hot wings.

So, it’s always an adventure when trying to please Matt with food.

My husband has been busy at work – he didn’t even get to see the boys yesterday.  He left the house at 4am and got home after the boys went to their sleepover.

I, always the pleaser, decided that I would make special “Matt Food” today, just for him.

I went to the store and found some french bread…OOooo!  French Bread Pizza!  He likes thick crust pizzas, I’ll bet he’ll love that!

I found his favorite chocolate ice cream…On sale.  Score.  No brainer, there.

I was wandering around in the chocolate sauces, because Matt loves chocolate sauce on…everything.  I suddenly remembered something from my past:

Phosphates! I haven’t made phosphates in years!

Running (not walking) down the aisle, I grabbed some seltzer water and some whipped cream.

“He will so so love these!” I squealed.  To the yogurt aisle.

Phosphates are an old soda fountain drink.  They’re just flavoring and carbonated water.  You’re supposed to add phosphoric acid to make it a ‘true’ phosphate.  But I don’t have any phosphoric acid laying around today, so we’ll just fake it.

Seltzer water, chocolate sauce, whipped cream…I even had some maraschino cherries.

Now the seltzer…Stir it up…Whipped cream…don’t be shy.  Put that stuff on like we’s friends….Cherry?Is that cute, or what?

Matt the chocoholic wouldn’t  touch one.

“Chocolate and soda?  Amy…yuck.”

That’s fine.  I drank his.  And mine.

Chocolate Phosphates

Chocolate syrup

Seltzer water

Whipped cream

Pour chocolate sauce into the bottom of a glass.  Fill about 3/4 up with seltzer, then top with whipped cream.

He better dig my french bread pizzas.

    I have never, ever heard of these. EEEEENNNTeresting! Sorry Matt wouldn’t touch them though. Being married to a picky eater would drive me mad. It’s bad enough with kids!

      LOL they’re really good! I worked at a restaurant while in college that served them; I had no idea what they were before that! I get really really mad when he picks the tomatoes and onions out of the boys’ plates of spaghetti. Which tells me that someone did that for him – meaning this picky-eater thing was LEARNED!

    That is so funny! My husband is like matt sometimes too. I made home made butter beer a few weeks ago and he refused to even try it because it “sounded weird.” In any case I think that your chocolate soda sounds delicious!

      LOL that sounds totally like Matt…Thanks! I told him he was silly for not trying them…my sons sucked them down really quickly!

    My Mom used to make these for me when I was growing up. She said she used to make them at a bar she worked at once upon a time. I love them!!!! P.S. I don’t think she ever used any acid either! :)

  7. Don’t worry, I can relate to everything you said in this post. Let’s get together and have a food fest party while our husbands go out back and eat hamburger and Doritos together! Ha Ha! Hopefully your boys will grow up and love everything you make!! Anyway, these phosphates look good. I bet kids love them.

    I don’t have any of the other ingredients on hand, but I do have that exact container of whipped cream in my fridge…so I may just go empty it into a bowl and have it for breakfast.

    Great!! I think chocolate really goes great with soda. At least that’s mine opinion. This looks just amazing. I bet if I made them, I’d have to drink all of them. :) ))

    Wow I must be a lot older than all of you. Phosphates were very popular when I was a kid and I owned an ice cream shop in the mid 70′s. Okay now you know how old I am. LOL. While phosphates were very good, the ice cream soda tops that. A scoop of vanilla ice cream, seltzer water, chocolate sauce, give a little stir then top with whipped cream and a cherry. OooooMMMMGGGG!! My kids and grandkids have no idea what phosphates are either.

      LOL My aunt worked in our local ice cream parlor when she was in high school. My dad said she made phosphates, he recognized it immediately! I made these at a little restaurant where I waitressed in college – never heard of them before then!

    My husband (Matthew – he won’t go by “Matt” even though he did when we were first dating) is a picky eater too… although not as bad as yours seems to be. I just get frustrated because mine hates certain things that I love. Like mushrooms, and sweet potatoes. I can’t cook with these items at all and sometimes when I see awesome recipes here in the blogging world for them, I get a little mad at the fact that I can’t make them.

    Your chocolate phosphates look awesome. I’d have 2 of them as well!

  21. Didn’t you know? The veggies are poison. I’m the picky eater in our house. So sorry Matt wouldn’t even attempt the phosphates. They’re so cute! Even I would’ve tried one of those. Bet the boys devoured them.

    Too funny! I have never actually heard of a “phosphate”, but I think I just night like it! I’m picking up selzer next time I’m at the store! Neat idea!

My husband hates veggies too but lately he has come around them. tell you a little secret, the only way to make these KIDS (aka husbands) like veggies is to keep cooking them and trust me they do start liking it :) and I make this tooo! but I like to switch the whipping cream with vanilla icecreammm!

  26. I can totally understand. My boyfriend is equally weird about food. I have to hide vegetables in his food, like an eight year old. I have a big bottle of phosphoric acid in my lab right now, but I think I would skip it too, too burny.

    I once had a boyfriend who was fantastically picky, he wouldn’t even eat rice. It was a major source of contention.
    Luckily my current boyfriend will at least try anything once, even if he doesn’t like it.
    These sodas look great, I’m definitely going to try!

      Thanks! I never DREAMED I would marry a picky eater! When we were dating, I was fairly certain I could “cook” him out of his picky-eater syndrome. Wrong!
