Seriously, it is.
I’ve complied a list of people you should make friends with immediately.
1. Car Mechanic. Or someone who knows about drive shafts, broken springs, and can give you honest advice on giving up on your vehicle and sending it to car heaven.
2. A Plumber. Or someone who understands the complexities of water going in and out of pipes. It’s seriously more complicated than it should be.
3. A Carpenter. Or someone who can come and fix the drywall project that you started because you watched HGTV and was completely convinced that you could tile a floor and hang drywall on by yourself in an hour.
4. A Truck Owner. Or someone who can haul a futon and a velvet Elvis across town three different times as you change apartments during grad school.
5. A painter. Or someone who knows how to paint your child’s name on stuff.
I’m lucky in all of these, but I’m especially lucky to have my cousin Eric.
Last year, Joey started TBall…We quickly realized that “JOEY” written on the inside of his helmet wasn’t going to distinguish his from the other 15 red batting helmets in the dugout.
Enter my cousin Eric. My cousin Eric who just happens to paint.
Well, this year, little bro plays…And his silly mother had hoped that we could SHARE a batting helmet.
His mother is so silly and naive.
So we got another batting helmet. And it needed paint, too.
And Deej, being all particular, was afraid that if we just had “ROBINSON” put on his, we wouldn’t be able to tell his from Joey’s helmet.
Because clearly, it’s really difficult to tell red from black.
So, Eric to our rescue. Again.
I’ve tried to pay Eric. He won’t take any money.
I offered him whoopie pies. Not on his diet.
Further inquiry revealed that Eric is on a low carb diet.
Well, surely we can come up with something to pay Eric back for all his hard work on these helmets.
So let’s make a low carb pie.
1 1/2 cups pecan pieces, 1 stick melted butter, 2 pkg cream cheese, 1/4 cup plus 2 tbsp Splenda, sugar free whipped topping.
You could certainly replace the whipped topping with fresh whipped cream, that would be awesome.
Pecan Pieces. They come like this.
You could also grind some in a food processor.
Mix the butter, pecans and 2 tbsp splenda…
Then press into a pie pan.
Throw this into the fridge to set the butter.
Beat the cream cheese until it’s nice and fluffy – then add the 1/4 cup Splenda.
You can certainly use more (or less) Splenda – I think this is about right. It’s pretty sweet, feel free to cut back on it if you’d like.
I mixed this and felt it was a little stiff, so I added 1/4 cup sour cream.
Making it much smoother.
Now let’s fold in the whipped topping (or whipped cream, if using), and pile into the cool pie crust.
Well, that looks pretty much not-exciting…
Some pecans, maybe?
That’s much better.
I wish I could cut it, but remember: This is Eric’s pie. Not Eric’s-Pie-that-we-can-take-a-slice-out-of-and-hope-he-won’t-notice.
You make one.
Low Carb Cheesecake Pie
1 1/2 cups pecan pieces
1 stick butter, melted
2 tbsp Splenda
2 pkg Cream Cheese
1/4 cup Splenda
1/4 cup sour cream
1 container sugar free whipped topping (Or fresh whipped cream)
Mix pecan pieces, melted butter and 2 tbsp splenda, press into pie pan, refrigerate until butter is set. Beat the cream cheese until fluffy, then add 1/4 cup splenda. Mix in the sour cream, then fold whipped topping into the cream cheese mixture. Pile into the set pie crust, top with pecans.
Keep refigerated.
Here’s the carb breakdown: Pecans: 6 net carbs, Splenda: about 11, Sour cream: 2, Whipped Topping 75, Cream Cheese: 32. Total Carbs: 126. Servings: 8. Total Net Carbs: 15.75
Not bad, and this can totally be lowered if you use fresh whipped topping.
