Seriously, it sucks today.

And by “It”, I mean everything.

Started off this morning with oversleeping.  I hate running behind, and when I oversleep, I run behind.

Next, I drug my Crocs through wet leaves, then proceed to drag said leaves all through my mother’s house.  She was not pleased with her only daughter.

Got DJ to school and smelled something burning.  Yep, it was my car.  There’s a melted plastic grocery sack under my car, making it smell like…well, melted plastic.  Not cool.

Made it home without setting anything on fire and got into an argument with an HR representative over the details of my job as a 9-1-1 dispatcher.  Apparently, “just answering calls and sending an ambulance out” does not qualify as Customer Service.

Yes, really.

Next phone call was from the doctor.  Evidently, the boys’ scatterbrained mother forgot their appointment last Thursday.  Crapola.

Lord, have mercy.

But there is good news.

The good news is, I have a hair appointment this afternoon.  Getting my hurr did makes me happy.  Deliriously happy.  So happy in fact, I think I’m going to have a fun color streak put in.

Just for fun.  And because I’m almost 40.  It’ll hide the gray.

The better news:  I made some candy.

Mostly to calm my nerves.  But also so I can have something awesome to eat myself out of this funky morning.

My dear friend Rose gave me this candy recipe.

Rose follows the blog and knows how I giggle at all the terms for candy temperatures.

Rose promised this is “quick, easy and delicious”.  Which, as we all know, are three of my favorite words.

And she’s right.  It’s all of those.

1 cup corn syrup, 1 cup sugar, 1 1/2 cups peanut butter, 1 tsp vanilla extract, 4 cups corn flakes

You probably have all of this in your pantry.   I did.

Pour the corn syrup and sugar into a sauce pan and heat to boil.

Since no specific temperature is needed (Translation:  no balls necessary), I just cranked the heat on this and let ‘er rip.

It boiled in about 5 minutes…And fogged up my camera lens.

Add the peanut butter and vanilla extract…Stir until smooth then add the cornflakes…I used two spoons to plop these onto wax paper to cool…And then, even though Rose doesn’t suggest this….

I decided a drizzle of chocolate never hurt a soul.

So easy, so cute.

I made these, and wrote this post in exactly 20 minutes.

So don’t even try to tell me you don’t have time to make this.

Rose’s Cornflake Candy

Recipe courtesy of Rose, aka my Words with Friends Nemesis.

1 cup corn syrup

1 cup sugar

1 1/2 cups peanut butter

1 tsp vanilla extract

4 cups corn flakes

6 oz chocolate chips (opt)

1/4 cup heavy cream (opt)

In a saucepan, heat the corn syrup and sugar to a rolling boil.  Remove from heat and add peanut butter and vanilla, mix until smooth.  Stir in corn flakes and drop by teaspoon onto wax paper.

Heat heavy cream and pour over chocolate.  Stir until smooth and drizzle over candy.

This makes a lot of candy.  A lot.  I’m going to surprise my girl Heather with these at my hair appointment.

Surely, surely…this day will get better.

I know, it will…

And don’t call me “Shirley.”
