I know that white chocolate isn’t actually chocolate.  I don’t care, it’s still my favorite.

I can remember the small gourmet store next to the restaurant where I worked – A rough day was rewarded with a Lindt white chocolate truffle.

My first time at The Cheesecake Factory, I didn’t need too long with the menu – there was no question what I was ordering  – White Chocolate Raspberry Truffle Cheesecake.  Duh.

And Starbucks?  Can you guess?  White Chocolate Mocha, you got it.

And of course, Mrs. Fields makes my favorite cookie  – White Chocolate Macadamia Nut.

I learned about white chocolate macadamia nut cookies back in the 80′s, when my bangs were reminiscent of a fountain.

Even that day, while listening to my Richard Marx cassingle, I knew that white chocolate macadamia nuts are what they snack on in heaven.  Which is why I gotta get there.

I had a bag of macadamia nuts in the bakery, purchased for some crazy idea I had before Christmas.  I decided today, we need to pull out that bad boy and make something.

Can we make a bar instead of a cookie?

Betty Crocker says we can.

1 1/2 cups macadamia nuts, 2 cups white chocolate chips, 1 tbsp vanilla 1 tsp shortening, 2 eggs, 1 1/2 cups brown sugar, 2 cups flour, 1 1/2 tsp baking powder, 3/4 cup margarine

Kind of a lot of ingredients.  Worth it, trust me.

Nuke the margarine and the brown sugar until margarine is melted…

Cream margarine mixture with the eggs, add vanilla….Then whisk together the flour and baking powderAdd this to the creamed mixture…Then dump in about 1/2 of the macadamia nuts and 1/2 of the white chocolate chipsStir together the spread into the bottom of a greased 9×13 baking pan.  Sprinkle the remaining nuts on top, and about 1/2 of the remaining white chocolate chips.

Bake at 375 for about 20 minutes…Money.

Allow to cool.  Meanwhile heat the remaining white chocolate chips with the shortening…

And drizzle over the top of the bars…

Holy crap, let’s eat!Uh.  Mazing.

I can’t even tell you how much I dig these.

White Chocolate Macadamia Nut Bars

Adapted slightly from Betty Crocker

Print me, Baby!

3/4 cup butter or margarine

1 1/2 cups packed brown sugar
1 tablespoon vanilla
2 eggs
2 cups flour
1 1/2 teaspoons baking powder
1 1/2 cups coarsely chopped macadamia nuts or slivered almonds
2 cups white chocolate chips
1 teaspoon shortening.
Preheat oven to 375.  Melt margarine with brown sugar in the microwave.  Cream margarine mixture with the eggs and vanilla.  In another bowl, whisk together the flour and baking powder.  Add the flour mixture to the cream mixture.  Mix in about 1/2 of the macadamia nuts and 1/2 of the white chocolate chips.  Spread mixture into the bottom of a greased 9X13 baking pan.  Sprinkle the remaining nuts over the top, then about 1/2 of the remaining white chocolate chips.
Bake for 20-25 minutes or until puffy and set.
Melt remaining white chocolate chips with the shortening, drizzle over bars.
I took these to everyone at work, mostly to get them out of the house before Joey and I ate them all. I think they’ll dig, too.
