My two boys are nothing alike.

Joey is my outgoing, fun loving child.  DJ is moody and reserved.

Joey is messy and gives up on projects quickly.  DJ is orderly and will stick with something until he figures it out (or breaks it).

Joey will get a sunburn 6 weeks before it’s even hot outside.  DJ will never burn – only tan.

Joey’s hair is thick and reddish-blond.  DJ’s hair never grows and is white in the summer and brown in the winter.

Joey likes Bakugans, Ben 10 Alien, Bey Blade, Toy Story, Scooby Doo and dinosaurs.  DJ likes Thomas the Train…only Thomas the Train.

Joey is in kindergarten and absolutely LOVES school.  DJ is in preschool and hates every minute of it.

Joey is rarely sick.  DJ is allergic to outside and peanut butter, has febrile seizures, a nebulizer and is sick about once a month.

And one of them is home today.

Mr. Joey Wayne.

Matt and I played “Rock-Paper-Scissors” to see who had to tell Joey he was staying home from school today…

Rock always wins.

I heard Joey begin to argue with his dad:

“But I’m feeling much better, Daddy!  I can go to school!”

So I went in to help.

“Hey, Joey…Since you’re sick, Mommy will make you something special today – what would you like?”

There wasn’t even a small pause.  “Peanut Butter Brownies.”

Like he had been thinking about this for a while.

So…peanut butter brownies it is.  Hope that’s okay with ya’ll…

1 1/2 cups sugar, 1 cup self-rising flour, 1/4 cup peanut butter, 1/4 cup butter, 1 tsp vanilla, 2 eggs.

Cream the butter, peanut butter, sugar, eggs and vanilla….add the self-rising flour…

Spread into an 8×8 pan lined with parchment paper.This is abotu 1/2 cup of semi-sweet chocolate chips melted with 1/4 cup of butter…Just plop some on the top of the peanut butter batter…And just spread it over the top…Bake at 350 for 30-35 minutes – mine took 35.This is 1/2 cup of peanut butter and 1/4 cup butter, melted together in the microwave.Just spread that over the baked brownies.And THIS (the last layer, I promise) is the remainder of the chocolate and butter from earlier – I re-melted it and put it in a pastry bag…You could do that Sandra Lee thing with the zip bag, too.

Drizzle the chocolate over the top of the peanut butter mixture.You can do more or less.  Whatevs.

Into the fridge for a few hours to get everything nice and set.

So you can get nice super-clean cuts.Be-you-tee-full.And awarded Joey’s Sick Boy Seal of Approval.

Peanut Butter Brownies

Adapted from a recipe found at Cookiemadness.net.

Print me, baby!

1 1/2 cups self rising flour

1/4 cup butter

1/4 cup creamy peanut butter

1 1/2 cups sugar

2 eggs

1 tsp vanilla.

Chocolate Layer:

1/2 cup semi-sweet chocolate chips

1/4 cup butter

Peanut Butter Layer:

1/2 cup creamy peanut butter

1/4 cup butter

1 tsp vanilla

Preheat oven to 350.  Line an 8×8 baking pan with parchment paper.  Cream butter and peanut butter with sugar, add eggs and vanilla and mix thoroughly.  Add self-rising flour, stir until just combined. Spread into prepared pan.

Melt the ingredients for the chocolate layer together, stir well.

Plop about 3/4 of the chocolate mixture over the peanut butter batter, spread to cover. Reserve the remaining chocolate for the topping.

Bake for 30-35 minutes.  Cool on a wire rack.

For the peanut butter layer, melt the peanut butter and butter together then add vanilla.  Pour over the cooled brownies, spread to coat evenly.

Finally, take the remaining chocolate from the chocolate layer and put into a pastry bag or zip bag.  Snip the bottom and drizzle over the peanut butter layer.

Allow chocolate and peanut butter to set up in the refrigerator for a few hours.

Cut and serve.

These are yummy.  Don’t let the gazillion instructions scare you – totally worth it.
