I was sitting around thinking yesterday…
Well, I wasnt’ really sitting around. I was freakin’ busy in the bakery.
Sometimes, when I’m stirring batter…or whipping meringue…or whatever…my mind tends to wander…
I was listening to my favorite radio station that plays a lot of Matchbox 20 and was reminded of the glory days of the 1990s.
When Courtney Love made me feel like I could sing.
When I wore Doc Martens every single day.
When I waved at Bruce Willis at a mall in Atlanta.
When my cousin introduced us to Peach Salsa.
My cousin Eric brought it to my parents’ house around Christmas. Everyone hated it except me and Eric. I’m pretty sure we ate the whole jar.
My mom brought me some fresh peaches:
and I was seriously considering making peach salsa. But I didn’t want ya’ll to think I was super stuck in the 90s. Even though I am, there’s no need to display it to the world, right?
So I thought about salsa…and salsa on bread…then I thought about bruschetta.
Could I make peach bruschetta? I mean, bruschetta is just a few ingredients…
Ahh, what the hell. We only live once, right?
So I took my favorite bruschetta recipe and where it says “tomato”, I made it say “peach”. At least, that’s where this starts…
So I peeled and diced 4 peaches
Added 1/2 of a medium-sized red onion…
And about 3 tbsp of dried basil
My fresh basil was WELL past its prime. Dried is fine, but use fresh if you have it. Increase to 1/2 cup.
Then I stirred.
After a taste, I added about 1 tsp salt, 1/2 tsp pepper…then I shook on some crushed red pepper and garlic for some zip.
Every time I think something needs “zip”, I add red pepper. That’s probably not culinarily correct, but it suits my tastes.
Then I put it on some toasted bread…oh yum.
To make it super-Italian Bruschetta-y, you should rub the toasts with a clove of garlic.

Peach Bruschetta
Adapted from All Recipes
4 large peaches, peeled and diced
1/2 medium red onion
3 tbsp dried basil
red pepper, to taste
1 tsp salt
1/2 tsp black pepper
garlic powder, to taste
baguette, sliced and toasted
Mix the peaches, onions and dried basil in a bowl. Add salt, pepper, and red pepper and garlic to taste. Place baguettes on a serving platter and top with peach mixture. Serve immediately.
It’s so good, it’ll make you wanna slap your Italian grandmother for always using tomatoes in her bruschetta.
Okay, totally don’t slap your Italian grandmother. Please, dont.
