Today I crashed an office party.

Well, I didn’t exactly “crash”…I sort of invited myself.

My cousin Stacia had ordered some cookies…maybe you remember?

These are Thank You cookies for her Team In Training team…She’s awesome like that.

Anyways, I promised to deliver…Stacia said, “Friday is perfect…we’re having a food day!”

Well, Food Day…I’m there, dude.

I took my chili cheesecake bars, and then proceeded to stand there and eat all their food for a solid hour.

The office get-together is something I sorta miss.  I miss the camaraderie, I miss the excuse to stand and gossip, I miss the food.   I’m okay with being Mommy, but sometimes I miss…like, jobs, I guess.  Sometimes.

So, on my way home, I was thinking about what makes office party food so awesome.

The best office party food is food that can sit out all day and not draw flies.

The best office party food is food that you test on people before you take it to your in-laws.

The best office party food is food that doesn’t require table service.

The best office party food is food that allows you to show off your awesome new serving platter.

The best office party food is food that you can throw together in the  morning before you get in the shower.

So I had found a recipe and was dying to try it.  It meets all my requirements for Best Office Party Food.

Apple salsa with cinnamon tortilla chips.

Gorgeous, right?

Super easy.  Just a lot of freakin’ chopping.

Let’s start with the salsa…

2 Granny Smith apples…1 pear

I don’t use enough pears in my cooking, I swear.

2 stalks celery…errr…3 stalks celery, sorry.

Seedless grapes…about 1/2 cup?Chopping grapes is Uh.  NNoying.

Mix that all together…

Add a handful of walnuts…3 tbsp of lemon juice…

2 tbsp brown sugar…Mix it together and stick in the fridge….

Let’s get to the tortillas….

4 flour tortillas, 2 tbsp sugar mixed with 1 tsp cinnamon, 4 tbsp butter (melted)…you don’t actually need that much butter, 2 tbsp would cover it for sure.

Spread each tortilla with melted butter…

Sprinkle with the cinnamon sugar mixture…Slice each into 8 wedges…Onto a baking sheet and into a 475 oven for 7 minutes or so…Beeeauuutiful!

And here it is tipped on it’s side…

Apple Salsa with Cinnamon Tortilla Chips

For the Salsa:

2 Granny Smith Apples, chopped

1 medium pear, chopped

1/2 cup grapes, chopped

3 stalks celery, chopped

1/4 cup chopped walnuts

2 tbsp brown sugar

3 tbsp lemon juice.

Mix all ingredients in a large bowl. Refrigerate.

For the Chips:

2 tbsp sugar

1 tsp cinnamon

4 8 inch flour tortillas

Brush the tortillas with melted butter.  Sprinkle the cinnamon and sugar over each.  Cut into 8 wedges and bake at 475 for 7 minutes.

And serve.
