I am seriously in love with onions. The bite, the sweet, the tang…I love onions. I will put onions on everything.
A lot of onions. In my omelets, on my pizza, in my burgers, on my burgers…I love onions.
The ladies at our local Subway see me coming and start checking the onion container to make sure they have enough.
My husband hates onions…of course he does.
He hates the smell, the look…His favorite pizza is Bacon Cheeseburger – but I can’t order a “bacon cheeseburger pizza” because they put onions on it. I have to order a hamburger and cheese and bacon pizza.
So he’s gonna be pretty miffed when he hits the sidewalk outside the kitchen and smells the cooked onions.
He’s really gonna get upset when he sees a pie in the fridge and takes a bite before I have a chance to tell him what’s in it.
Would I do that? Of course, I would.
But it doesn’t matter what he thinks. After 6 years of marriage, I’ve finally come to the conclusion that I don’t cook stuff like this for him. This is for me.
And for me, I’m going to make an onion pie. And his picky-ass can just starve.
So, Onion Pie it is. And I’m going to love every smell, texture, look, taste, warmth…ugh, it’s gonna be so good.
Here’s the list of starring players:
1/2 cup sour cream, 2 eggs, 4 slices cooked bacon, 1/4 cup Parmesan cheese, crushed red pepper, hot sauce, baked pie shell, and 3 onions, cooked down until soft and translucent in 1 stick of margarine.
Let’s take a moment to be impressed about how dumb I am.

Nice right? It came with a set I got for Christmas a few years ago. Today is the first time I’ve ever used it. Why? Because it was BURIED in the bottom of my cabinet. I accidentally pulled on it, thinking it was a smaller pan. You don’t know how many times I’ve done grilled cheese 1 at a time because I didn’t have a big enough pan. Duh. Duh. Duh.
Anyways, it was certainly a nice find.
Back to the pie.
Mix the egg, sour cream, hot sauce, red pepper, Parmesan cheese…
Add the cooked onions (and the juice):
Mix together completely and pour into pie shell…
Crumble the bacon and sprinkle it over the onion mixture…
More crushed red pepper…
Bake at 375 for 15 minutes, then turn heat down to 350 and bake another 20 minutes…or until golden browned….

Are you kidding me? I really want to pretend it’s a pie eating contest and shove my face into it.
It’s okay to be jealous. I would be if the situation was reversed.

Onion Pie

3 large sweet onions
1 stick butter
1/2 cup sour cream
2 eggs
1/4 cup Parmesan cheese (more for sprinkling)
1 tsp hot sauce (or to taste)
1/4 tsp crushed red pepper (or to taste)
1 baked pie shell
4 slices bacon, cooked and crumbled
Preheat oven to 375.
In a large saucepan, cook the onions in the butter until transluscent and soft. Reserve juices. In a bowl, mix the sour cream, eggs, parmesan cheese, hot sauce, and crushed red pepper. Add the onions and juice, mix well. Pour into pie shell. Sprinkle bacon over the egg mixture, then more Parmesan cheese over the bacon. Sprinkle a little crushed red pepper over all. Bake at 375 for 15 minutes, then turn the oven down to 350 and continue to bake for another 20 minutes or until golden brown. Cool slightly before serving.
Dude, if they have pie in heaven, this will surely be on the menu.
