I have already waxed poetic about whoopie pies and cupcakes being so 2010.
I made whoopie pies today…and I’m totally okay with that.
This is not the first time in my life that I have been behind in trends…
1. Cell phones have passed me by. I have one…only because my husband forced me. I never charge it, I’ve had it in the washing machine, I leave it in the car. I’m awesome with my phone. Don’t try to text me, it takes me an hour to respond.
2. iPod. Never had, never wanted. Not even sure what they do. Which tells me I don’t need one.
3. In 1982, my parents started listening to Frankie Valli and the Four Seasons. Obviously, knowing all the words to “Walk Like A Man” made me the most popular kid in 6th grade.
4. I still wear Doc Martens. Proudly.
5. I have never seen an episode of “Mad Men”, “Glee”, or “True Blood”. I started “The Sopranos” in season 3.
I’m shutting up now, and making whoopie pies. Because I’m just that stubborn.
3/4 cup shortening, 1 1/2 cups sugar, 2 eggs, 3/4 cup buttermilk (milk with splash of vinegar), 1 1/2 tsp baking soda, 2 1/2 cups flour, 3/4 cup hot water, 3/4 cup cocoa.
Cream the shortening and sugar…
Sometimes I use lard. Yup. L-A-R-D.
Whisk together the flour and cocoa powder, then add 1/2 to the shortening mixture…
Stir, then add the buttermilk…
Stir, then add the rest of the flour mixture…
Finally, dissolve the soda in the hot water…
Then dump into the batter and mix well…
Now…let’s decide if we want biggun’s or bitsy ones…
Bitsy ones.
Scoop out onto a baking sheet. Bake at 350 for 12 minutes…or until you can smell them.

Now the best part – the frosting.
This is just a buttercream – 1 cup butter, 2 lb powdered sugar, 1/3 cup water, 1 tsp vanilla.
Plop some on the bottom of one of the cookies…
Then smoosh another on top.
See how little they are?
Dude…
I can eat one in one bite, but it would be more lady-like to eat one in two bites.

Original Whoopie Pies
Adapted from several whoopie pie recipes given to me over the past year.
3/4 cup shortening
1 1/2 cups sugar
2 eggs
3/4 cup buttermilk (milk with splash of vinegar)
1 1/2 tsp baking soda
2 1/2 cups flour
3/4 cup hot water
3/4 cup cocoa.
Preheat oven to 350
Cream shortening and sugar, add eggs and mix well. Whisk together flour and cocoa, add half to shortening mixture. Stir. Pour in the buttermilk, stir until combined. Pour in the remaining flour mixture. Dissolve the baking soda in the hot water, then dump into the cookie batter. Mix until completely combined.
Scoop out batter onto cookie sheets. Bake for 10-12 minutes, or until cakes spring back when touched. Allow to cool slightly on cookie sheet, then transfer to wire racks.
For the frosting:
1 cup butter
2 lbs powdered sugar
1 tsp vanilla
1/3 cup water
Cream butter and vanilla, add water. Pour in powdered sugar slowly.
Spread frosting on the bottom of a cookie, then smoosh another cookie on top. Serve.
Eat.

3. I bought three desks at an auction a few weeks ago. I only wanted one, but apparently was bidding on all three.
4. I never drink milk. And never make the boys drink it. Bad mommy. Bad.
5. I stopped buying Brawny towels because of their use of “Lean on Me” in their commercials. I’m pretty sure that song wasn’t written to sell paper towels.
6. My favorite thing to do is eat pizza in bed.
7. I can hang a spoon on my nose. Well…the last time I did it was in the early 90s after about 60 thousand Bud Lights…I’m pretty sure I could still do it, though.
