Crumb Cake Mashup

I seriously love a good crumb cake.  And a coffee cake.  Anything in that cake family is okay in my book.

Coffee cakes and crumb cakes are dense, rich, sweet…buttery…just everything that I love about cake.

I just made a big coffee cake for one for my mother’s friends, and almost cried because I wanted to try it.  It was filled with cream cheese.DSCF2615

OMG.  I.  Die.
While I was making this gorgeous cake, I was thinking about NY crumb cake.

And how much I adore a crumb cake, particularly with that crunchy topping.

Alas, I am (yet again) on a low-carb diet.

True to the diet, I have been turning up my nose at anything sweet or flour-y.

But, wow…that coffee cake looks freakin’ awesome.  And I still have a hankerin’ for a crumb cake.

I was really trying to figure out a way to have a crumb cake without Hulk-Smashing my low carb diet into the road and allowing it to be run over by a snow plow.

And I thought, ‘wow, what if I could make a crumb cake cookie?’

WOW!  What if I could?  That would be AWESOME!

Bu wait…what should the basic cookie part be?

Duh!  It should be SNICKERDOODLE!

So, I took my favorite snickerdoodle recipe – you use your favorite.

Or you can borrow mine, no bigs.  Mix it together, and get ready for the fun part.

Mix together 1 cup flour, 1/2 cup brown sugar, 1/2 cup melted butter.DSCF2604

Stir together until it forms crumbs…I added a shake-or-two of cinnamon.

DSCF2605Form your snickerdoodle dough into balls, just like you were going to make snickerdoodles,

but don’t roll them in cinnamon sugar…

Plop on some of that crumb topping.

Be generous.  Like we’s friends!

Bake according to the directions on your recipe and…
